Many people try to avoid oil in their meals to prevent the intake of excess trans fats and calories. There’s no harm in removing oil from your diet, but supplementing it becomes a task, especially since it’s so versatile. So today, we’ll look at an easy recipe, a creamy broccoli soup without oil!
Ingredients
Here’s what you’ll need to get started:
- 1 cup of cooked cannellini beans
- ½ cup of soaked cashews
- 1 tbsp nutritional yeast
- 1 tsp of Italian dried herbs
- 2 cloves of garlic
- 1 steamed broccoli
- 2 cups of water
For utensils, you’ll need a bowl, a pot or pan to use on the stove, your trusty blender, and a spatula.
Preparation
First, we’ll have to prepare the ingredients. Soak your cashews in a bowl and let them sit until the water is murky. Then, remove your cashews and rinse them off. As for the broccoli, simply break it into more manageable parts. You can’t do much with the whole head in one piece.
Now that you’ve prepared your ingredients, it’s time to put them in your blender. Assemble all of your ingredients, keeping the beans, cashews, and broccoli closer to the bottom so they blend properly.
Use a high-power blender until your ingredients become one smooth, liquid mixture.
Once you’ve properly blended all of your ingredients, it’s time to warm it up! There’s no soup without warmth, after all. Pour your soup into a pot on medium heat. Be sure to stand by, stirring gently to ensure the soup doesn’t burn or thicken.
Now all that’s left is to serve the soup warm and enjoy it! Be sure to scoop everything out of your pot with a spatula. You want to savor as much of the soup as possible and prevent staining on your pot. If you’re not in the mood to have it immediately, you can store the cold soup in the fridge for up to two days, in an airtight container.
