If you’re trying to keep oil out of your recipes, then look no further. Today’s recipe is a creamy cilantro sauce that contains no oil.
Here is what you’ll need:
- ½ cup of raw cashews, soaked
- 1 cup of fresh cilantro
- 2 tablespoons of lemon juice
- ¼ teaspoon of cayenne pepper
- ¼ teaspoon of ginger
- 1 garlic clove
- ¼ teaspoon of sea salt
- ¼ cup of water
The first step is preparation. Never make anything without cleaning your food first. To prepare your cashews, soak them in clean water for 1-2 hours. This will remove any particles from them and enhance their richness and nutritional value.
Make sure to rinse them thoroughly and discard the water once you’re done. You also have to clean the cilantro leaves before you use them as well, but it’s not necessary to cut them since we’ll be using a food processor later on.
Assemble all of your ingredients inside your food processor, making sure that the solid foods are closer to the bottom. This ensures the blades of the food processor will properly chop them down to size so there are fewer to no chunks in your final product. Blend everything until it’s at a smooth consistency.
Once you’re satisfied with it, it’s ready! That’s all there is to it. There’s no cooking or oil involved at all! You can even store this cilantro sauce in the fridge for a week without worrying about it going bad.
It’s the perfect dip to keep on the kitchen table or pour over your meals. Whether you’re looking for something to enjoy with cooked potatoes or a new centerpiece flavor for your meals, this is an extremely versatile sauce.
Our key ingredient in this creamy cilantro sauce is, as the namesake says, cilantro! It’s great for your skin and hair health and contains vitamins A, C, and K! Cilantro also contains potassium, manganese, and folate, and is considered to be one of the great superfoods! Cilantro is a food that you want to try to incorporate into as many meals as you can.
Cashews are the perfect source of light protein you would want from your snacks, along with fiber and healthy fats. It compensates for the loss you would incur avoiding oils in your food and adds a pop of flavor to your cilantro sauce.
