There are plenty of ways that you can make healthy food fun to eat.
Have you ever heard of a tofu veggie pot pie? If not, then you are missing out. This meal can be enjoyed at any time of the day. It’s both nutritious and delicious all at the same time.

Here is a list of the ingredients used to make the tofu veggie pie: Olive oil, diced carrots, celery and onions, some garlic, diced organic firm tofu, corn, vegetable broth, salt and pepper (to taste), diced potatoes, sprouted spelt flour, fresh parsley and spelt or brown rice pie shells.
Preheat a little olive oil in a casserole. Add the diced carrots, celery, and onions into the casserole. Mix everything together until the onions are translucent.
Add the tofu and the garlic into the mix then cook for about 5 minutes. Make sure to select organic tofu that is made out of non-gmo soy. Check the package to ensure that it is not genetically modified or infused with artificial ingredients.
Add 2 cups of vegetable broth and the potatoes into the mix. Let it cook for about 10 minutes.
Add the sprouted spelt flour. The flour absorbs the juice from the broth so that nothing spills when everything is added in the pie shells later on.
Add in the corn and the fresh parsley. Add a pinch of salt and a dash of pepper for flavor. Mix continuously until all the juice has run dry and all the vegetables have been mixed thoroughly.
Using the brown rice or spelt pie shells, add the vegetables evenly inside. To cover it, roll out some dough to put on top of the pie. Using a fork, make a few small holes to allow air to flow out of the pie.
Set the oven to 350 degrees Fahrenheit and cook the pie in the oven for about 30 to 45 minutes. Take note that cooking time may differ depending on the type of dough that you are using. If you are going with brown rice dough, it may take up to 20 minutes to cook, whereas if you make your dough out of spelt, it can take up to 45 minutes to cook.
