No-Bake Energy Balls

Are you looking for a quick gluten-free snack? Something to enjoy either on the go or as a quick bite when you’re at home? Then I have the perfect recipe for you here! This recipe is for no-bake energy balls! They’re little spheres of nutrition for you to enjoy, and there’s no need for anything other than a food processor!

I use my Kitchen Aid food processor which you can find on my Amazon page. If you have one at home, then be sure to use it as we will be blending more solid ingredients for this recipe. You can also use a high-powered blender for this as well.

Here is what you’ll need to make these energy balls:

  • 1 cup of pitted dates
  • 1 cup of cashews
  • ¼ cup of raw cacao powder
  • 1 tablespoon of almond butter
  • ¼ tablespoon of cinnamon
  • ¼ cup of coconut flakes
  • ½ glass of water

First, you need to soak the dates for about an hour before using them. Be sure to remove the pits. Soaking will help them get soft and make blending easier.

Next, place your pitted dates, cashews, cacao powder, almond butter, coconut flakes, and cinnamon in the blender. If you notice the blend is too dry and isn’t mixing properly, add some water to it. Remember, you can’t roll the mixture if it’s dry, but you don’t want to make it so wet that you end up with an unusable paste. Though I have recommended half a glass of water, you might not need all of it, and you certainly will never need more than half a glass.

Now, once you have created a dough-like mixture, you can begin to roll them up. Make sure you have a clean bowl or plate to place them, and a clean surface to roll them over. Scoop out the mixture in your hand and begin to roll it between your palms. It can make portioning easier if you use an ice cream scooper to take out the mixture from the blender.

Be sure to make them nice, round, and big so they don’t break when you pick them up and eat them later. Once you’re done rolling all of your balls from the mixture, it’s time to put them in the fridge. This allows them to properly take shape and stick together. Keep them in the fridge for at least two hours and then serve! They’ll be delightful energy balls that you can heartily enjoy at home or on the go!
