We all have a sweet tooth. And when we transition towards healthy eating, one of the hardest parts is cutting sweets.
However, who said that just because you’re eating healthy means you can’t have dessert? There’s a lot of healthy dessert recipes that don’t include any artificial sweets or unhealthy ingredients. Having a healthy dessert is possible. It’s all about choosing the right ingredients.
Today, I’m going to share with you the recipe for raw coconut & strawberry pie.
When it comes to making the pie crust, you need walnuts and dates (make sure you remove the pits from the dates). Both of these ingredients are rich in vitamins and minerals so they’re great to use as your base for your crust.
Add them in your food processor until they are well processed. Once they’re processed, add them to your bowl in which you will be using for your pie. I use a 9-inch round Pyrex. Make sure to press on it evenly with your hands to make your crust nice and even.
For the filling, add strawberries, bananas, vanilla extract and pureed coconut to the food processor and mix it well until its processed nice and smooth. These are all-natural ingredients with no added sugar.
Once the filling is done, add it on top of the crust and make sure you spread it evenly. You can top it with berries. Make sure to put it in the refrigerator or freezer for a few hours so it has time to set.
When it’s ready, it should look like a mousse. Next time you want to make a dessert but want to keep it healthy, this is a great recipe to keep handy.
